Beefy Chili Mac

Serves 8-10 | Prep Time 20 | Cook Time 75

Ingredients

1 lb elbow macaroni
1 lb ground beef
1/2 c caramelized onion (about 1 large onion)
2 T roasted garlic
1 large can diced tomatoes
1 8oz can tomato sauce
1 can whole corn, drained
1 T chili powder
1 t salt
1/4 t pepper
2 c finely shredded cheddar cheese


Cook macaroni according to box, minus a couple of minutes, so it is very al dente - drain


Brown beef, breaking up and draining off fat


Add caramelized onion and garlic, mixing well


Add tomatoes, tomato sauce, chili powder, salt and pepper, cooking for about 30 minutes or until sauce is not watery


Add corn and pasta and mix thoroughly


Pour into 9x12 baking dish and bake at 350 degrees for 30 minutes


Sprinkle cheese on top and bake for another 15 minutes or until cheese is melted

This recipe is from our church potlucks, and I have very fond memories of this comfort food. I have only made a few "updates" because there wasn't much I wanted to change!
