Beer Cheese Soup
1/2 cup butter (1 stick)
1 cup flour
4 cups hot chicken broth (heat in microwave)
1 1/2 cups heavy cream
1 jar of Cheese Whiz, 16 ounces
1 Tbsp Worcestershire sauce
6 ounces beer
1/2 tsp yellow food color (optional)
Melt butter in a soup pot.
Stir in flour; cook on low for about 5 minutes, stirring frequently.
Slowly add the hot chicken broth and cream to the pot, and mix until smooth.
Add the Cheese Whiz - stir thoroughly.
Add the Worcestershire, beer, and food coloring.
Simmer 15 minutes.
Pairs Well With
Found this recipe years ago in a magazine ad - probably for Cheese Whiz. The soup is good, and it's fun to garnish each bowl by floating a little popcorn on top of the soup.
