Beer Glazed Bacon
1 pound thick cut bacon
1/2 bottle dark lager
1/4 cup maple syrup
1/4 cup honey
1/2 tablespoon grainy mustard
1/2 tablespoon dry mustard
Preheat oven to 300°F. Line a pan with parchment.
Add honey and maple syrup to small saucepan and cook over medium heat until it comes to a boil; reduce heat to maintain a simmer and cook 3-4 minutes. Add beer and simmer until volume has reduced by half. Take off of heat and whisk in both mustards.
Arrange the bacon on the pan. Cover with parchment and bake 14-15 minutes.
Using paper towel, blot excess fat from bacon. Brush the glaze onto each strip of bacon.
Reduce oven temperature to 275°F and cook the bacon until crisp-chewy, about 40-45 minutes.
Transfer to paper towel-lined plate and serve.
