BERRY BEST BLUEBERRY MUFFINS

Ingredients

  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup sugar
  • 1 tbsp baking powder
  • *1 tbsp. bran or fiber (optional)
  • 1 tsp. lemon peel
  • 2 egg whites
  • 2/3 cup buttermilk, using skim
  • 1/3 cup unsweetend applesauce
  • 1 tbsp. vanilla
  • 1-2 cups fresh or frozen blueberries
  • *2 mashed bananas (optional)

Directions

  • Preheat oven to 400F. Spray 6 large muffin cups with nonstick spray. In a bowl, stir together flours, sugar, baking powder and lemon peel. In another bowl, beat egg whites until foamy. Stir in applesauce, vanilla and *bananas. Add buttermilk mixture to the flour mixture and stir just until moistened. Fold in blueberries. Spoon batter into muffins cups. Bake about 25-30 minutes or until toothpick comes out clean. Cool for 5 minutes before removing muffins from pan.
