Berry Tofu Cheesecake
2 cups lemon/lime soda, divided use
3 packets unflavored gelatin
1 cup raspberries or blueberries, rinsed
4 ounces tofu, drained
2 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
1 graham cracker pie crust
Combine half the soda with gelatin in a bowl; stir and set aside. Heat remaining soda then pour over gelatin and stir until dissolved.
Pour mixture into a blender; add raspberries, tofu, honey, vanilla and lemon juice. Process until smooth and creamy.
Pour into pie crust and refrigerate until firm. Garnish with additional berries, if desired, just before serving.
