BEST BAKE SALE COOKIE DOUGH- PINE NUT TASSIES

Ingredients

  • Dough:
  • 2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 sticks butter softened (Plugra makes this dough sinfully good)
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • Filling:
  • 2/3 cup packed brown sugar
  • 2 Tbsp butter, melted and cooled
  • 1 egg, lightly beaten
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 lb pine nuts (or pecan or almonds)

Directions

  • Combine the flour, baking powder and salt.
  • In large mixing bowl, beat the butter until light, add sugar and beat again until fluffy.
  • Beat in egg and vanilla.
  • Beat in dry ingredients.
  • Chill until firm.
  • Line mini muffin tins with dough and chill until very firm (or pop in the freezer)
  • Combine all filling ingredients and put about 2 tsp in each dough cup.
  • Bake 375 about 14 minutes.
