Best Bake Sale Cookie Dough- Pine Nut Tassies

Ingredients

Dough:
2 cups flour
1/2 tsp baking powder
1/2 tsp salt
1 1/2 sticks butter softened (Plugra makes this dough sinfully good)
1 cup sugar
1 egg
1/2 tsp vanilla


Filling:
2/3 cup packed brown sugar
2 Tbsp butter, melted and cooled
1 egg, lightly beaten
1 tsp vanilla
1/2 tsp salt
1/2 lb pine nuts (or pecan or almonds)


Combine the flour, baking powder and salt.


In large mixing bowl, beat the butter until light, add sugar and beat again until fluffy.


Beat in egg and vanilla.


Beat in dry ingredients.


Chill until firm.


Line mini muffin tins with dough and chill until very firm (or pop in the freezer)


Combine all filling ingredients and put about 2 tsp in each dough cup.


Bake 375 about 14 minutes.
