Best Cornbread

2 tbl. bacon grease or vegetable oil
1 1/2 c. cornmeal
1/2 c. flour
1 tbl. baking powder
1 tsp. salt
1 tsp. baking soda
1 1/2 c. buttermilk
3 eggs, beaten
1/4 c. bacon drippings ( or melted butter)

Grease 10" iron skillet with the bacon grease (or oil).

Place the empty skillet in a 400 degree oven.

In a medium bowl, stir together the cornmeal, flour, baking powder, salt and baking soda.

Pour in the buttermilk and eggs.

Gently mix by hand until thoroughly blended.

Stir in the melted bacon drippings (or butter). Remove the skillet from the oven, pour the batter into the skillet and return to the oven.

Bake for 20-25 minutes or until it begins to brown on top.

Pairs Well With


Serve piping hot with lots of butter.
