Beth's Ultimate Cheesecake
1-1/2 cups crushed vanilla wafer crumbs
1/4 cup butter, melted
5 pkgs. (8 oz. each) cream cheese, room temperature
1 cup sugar
3 tablespoons flour
1 tablespoon vanilla
1 cup sour cream
Crust: Mix together and press in a 8, 9, or 10-inch springform pan (this recipe works great in all sized pans). Bake at 350ºF for 7 minutes. Remove from oven and turn oven up to 500ºF.
Filling: In a large bowl mix the cream cheese, sugar, and flour. Add the vanilla and eggs, mixing well. Stir in the sour cream. Pour into the prepared crust. Bake at 500ºF for 8 minutes. Without opening the oven, turn the temperature down to 200ºF and bake for 40 minutes. Then turn oven up to 300ºF and bake an additional 20 minutes.
Serve chilled with a drizzle of raspberry sauce.
