BackstoryI got this recipe from my good friend, Big Jim, after he served it at his cornhole tournament. It is easy and yummy!
- 2tbl white onion
- 8 roma tomatoes (about 1 lb)
- 1 serrano chile (two if you're REALLY brave)
- 2tbl fresh cilantro
- 1 tsp sugar
- 1 tsp salt
- 1tbl fresh lime juice
- Put pepper(s), cilantro, sugar, salt and lime juice in food processor - pulse until finely chopped. Then add onion, pulse to break up (two or three pulses). Add tomatoes and pulse until tomatoes are size you want them to be.
- Serve with tortilla chips and enjoy!
