Ingredients

Bread flour 340 grams
Pastry flour 170 grams
Salt 7 grams
Baking powder 14 grams
Sugar 56 grams
Butter 156 grams
Whole eggs 1 ½ each
Butter milk 255 grams


mix flours and salt


add COLD butter in chunks and break up until pea sized


add buttermilk and eggs and mix until just combined


roll to 1/2 inch thickness, do a three fold and then roll out to 1 inch


cut into desired shape


egg wash


refrigerate for 10 minutes


bake 375 DECK
