BLACK BEAN AND CORN SALSA

Ingredients

  • 16 oz can black beans
  • 11 oz can white corn
  • 14 oz can diced tomatoes
  • 1 large clove garlic, minced
  • 1/4 C minced red onion
  • 2 to 3 T minced jalapeno or poblano pepper.
  • 3 T fresh sqeezed lime juice
  • 3 T fresh chopped cilantro

Directions

  • This makes a good side dish or salsa with chips. Its from the Ft. Worth Star Telegram,on a feature on fast and easy to make dishes from canned food.
  • 16 oz can black beans
  • 11 oz can white corn
  • 14 oz can diced tomatoes

  • 3 T fresh sqeezed lime juice
  • 3 T fresh chopped cilantro
  • Drain and rinse black beans. Drain corn and tomatoes. Mix all ingredients in a large bowl. Refrigerate for at least an hour.
  • 4 servings per the recipe (Mine made a huge bowl)
