BLACK BEAN PASTA WITH LEMON BUTTER

 

  • Cooking Time: 10 minutes
  • Servings: 1
  • Preparation Time: 15 minutes

Ingredients

  • 2 oz. Black Bean Pasta
  • Vegan Butter
  • Lemon
  • Slightly steamed Peppers, Carrots, Snow Peas
  • Salt and Pepper

Directions

  • Boil Pasta until Al Dente
  • Meanwhile, steam veggies, toss with a little v. butter, salt and pepper
  • Drain pasta
  • Place in bowl
  • Add several tablespoons of v. butter
  • Squeeze 1/2 lemon or more to taste
  • Add Salt and pepper
  • Top pasta with the steamed vegetables and serve.
  • Add more lemon as desired.
