BackstoryI experimented with this a couple of summers ago. It's perfect with grilled fish or chicken. I usually serve it with grilled sea bass. Rarely any leftovers.
- 2 cans of black beans
- 1 mango (diced)
- 1 pear (diced)
- 1/2 cup of creme of coconut
- 1/4 cup fresh chopped cilantro
- 1/4 cup of yellow bell pepper
- 1/4 cup of onion
- salt & pepper to taste
- Mix all ingredients in a bowl, refrigerate and served chilled. Add more creme of coconut if you like it sweeter!
