BLACK BEAN SOUP

Ingredients

  • 1 can Fat Free chicken broth
  • 2 cans black beans, undrained
  • 1 can Rotel tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. cumin
  • 2 tsp. chili powder
  • 2 tsp. canola oil
  • 1/2 cup diced carrots, optional
  • 1/2 cup chopped celery, optional

Directions

  • Saute onion, celery and garlic in oil until tender. Add remaining ingredients and heat through.
