Black Bean and Corn Salad
1 15 oz can black beans, drained and rinsed
2 cups fresh or frozen corn, thawed
1/2 pint cherry tomatoes, quartered
3 cloves minced onion
1/2 cup diced red bell pepper
1/4 cup chopped fresh cilantro
2 TBS extra virgin olive oil
3 TBS fresh lime juice
1 1/2 teaspoons ground cumin
hot sauce to taste
salt and black pepper to taste
Combine all ingredients and let sit in the refrigirator so the flavor can combine.
Pairs Well With
I love bringing this salad to barbeques and family gatherings. It has just the right amount of heat and everyone loves it. It is great as a dip too.
