BLACK AND WHITE MOUSSE TORTE

Black and White Mousse Torte

 


INGREDIENTS

  • Crust:
  • 2 cups ground chocolate wafer cookies
  • 4 oz melted butter
  • White Layer:
  • 12 oz white chocolate (Callebaut is an excellent brand)
  • 1/4 cup water
  • 2 1/2 cups heavy cream
  • Black Layer:
  • 12 oz chocolate
  • 1/2 cup water
  • 1/2 quart heavy cream
  • 1/2 cup sugar

DIRECTIONS

Crust:


Combine and press into pans to cover bottoms. Bake 15 minutes at 350.


White Layer:


Chop chocolate, place in bowl and add water.


Melt over simmering (not boiling) water until smooth.


Whip cream and fold into chocolate.


Smooth into pans and spread even.


Chill well.


Black Layer:


Melt chocolate as above.


Whip cream and fold into chocolate.


Spread over the white layer.


Chill well.


Optional Toppings:


Whipped cream


Drizzled melted chocolate


White chocolate shavings or curls
