BLACK TRUFFLE, SAUSAGE AND POTATOES

Ingredients

  • 1/2 small black truffle
  • 4 medium potatoes- grated
  • 3 small shallots- grated, or chopped finely
  • 1/2 C or more fresh grated italian hard cheese, like pecorino romano
  • 3 eggs
  • dash a milk
  • fresh garlic cloves- to taste
  • salt and pepper
  • 250 g pork sausage
  • rosemary olive oil

Directions

  • grate your cheese, truffle and garlic. add 3 eggs and dash of milk- mix well- add olive oil to refine your mixture
  • lightly cook saugage- add potatoes and shallots
  • mix in large bowl
  • coat baking pan with olive oil
  • bake 350F for 30 minutes

Decided to make this for breakfest...it is what I had basically on hand
