Blackberry and Passion Fruit Cheesecake
3-1/2 ounces butter
6 ounces biscuits
4 ounces cream cheese
1/4 cup caster sugar
2 tablespoons lemon juice
10 ounces cream
9 ounces fresh blackberries
2 passion fruit
Crust: Melt butter. Crush biscuits fine. Combine butter and biscuit crumbs, mix well. Press evenly over base and side of 10-in. flan tin; bake at 350ºF for 10 minutes; allow to cool.
Filling: Beat cheese, sugar and lemon juice with an electric mixer until smooth, beat in eggs one at a time. Add cream and beat until combined. Stir blackberries and passion fruit pulp together and spread onto base of baked crust. Top with filling and bake at 350ºF for 30 minutes or until set. Cool and refrigerate until cold.
Serve with whipped cream and extra blackberries.
