BLACKCURRANT CORDIAL

INGREDIENTS
- Servings: 6 litres
- 3kg blackcurrants
- 12 cups water
- sugar
- 1 heaped tablespoon tartaric acid
DIRECTIONS
Place blackcurrant and water in a very large saucepan or jam pan. Bring to the boil and simmer for 15 minutes. Strain through a colander, then pass resulting liquid through a fine sieve lined with muslin
For each cup of liquid, add 1 cup of sugar. Place liquid and sugar in a clean saucepan, bring to the boil and simmer for 2 minutes. Add tartaric acid and mix well
Pour into sterilised bottles and seal immediately. The cordial can be consumed straight away. Refrigerate after opening
