BLACKENED SHRIMP OVER BAKED SWEET POTATO WITH ANDOUILLE SAUCE

Ingredients

  • 10 deveined gulf shrimp
  • 2 sweet potatoes
  • 1/3 cup diced andouille
  • 1.4 tsp minces garlic
  • 1 tblsp honey
  • 1 bunch green onions
  • 3.4 cup heavy whipping cream
  • cajun seasoning

Directions

  • bake sweet potatoes in oven @ 350 for 1-1/2 hours
  • season shrimp with cajun seasoning
  • brown dice andouille, onions and garlic in a skillet
  • add cream and honey.
  • mash sweet potatoes
  • blacken shrimp on high heat approx 30-40 second on each side
  • place a dollop of creamed potato in bowl, spoon andouille sauce on potato and top with blackened shirimp
