Blood Orange Salmon with Citrus Salsa
3 lb. salmon filet
2 tblsp. brown sugar
2 tblsp. olive oil
2 garlic cloves, minced
1 lemon, zest of
2 blood oranges, thinly sliced
3 blood oranges
1 naval orange
1 jalapeño pepper
4 tblsp. butter
salt and pepper
Preheat your oven broiler to high setting and set the rack in the middle.
In a bowl, mix together the brown sugar, olive oil, garlic cloves, lemon zest, and some salt/pepper. Place your salmon on a non-stick baking sheet then rub the mixture all over then place the thinly sliced blood orange slices. Then, broil the salmon for 10-15 minutes or just until flakey with a fork.
Prepare the citrus salsa while the salmon is cooking. Take the the oranges, peel and chop them, also clean and dice the shallot and jalapeño along with at least 3 tablespoons of fresh cilantro. Mix your prepared ingredients in a bowl, then add the juice of 2 limes. Season with salt and pepper to taste.
Melt the butter then add two tablespoons of your favorite fresh herbs (basil, rosemary, thyme, etc.) then add on top of the salmon when finished cooking.
Serve the salmon topped with some of the delicious salsa and voilà, bon appétit!
