Blue cheese and bacon pasta

Why I Love This Recipe


Ingredients You'll Need

350g dried pasta (penne works well)
275g broccoli (cut into small florets and stalks too)
1 tbsp olive oil
bacon (3 rashers - cut into strips)
100g button mushrooms, halved
100g blue cheese, crumbled
1 tsp olive oil
black pepper (to serve)


Directions

Cook the pasta in a large pan of boiling water for approximately 8 minutes (check the instructions on the packet)


Add the broccoli and continue cooking for another 2-3 minutes until the broccoli is tender


Meanwhile, heat the olive oil in a frying pan and fry the bacon for 1-2 minutes, add the mushrooms and fry for about 5 minutes


Drain the pasta (reserving a little pasta water in a mug) and broccoli and combine with the bacon and mushrooms


Stir in the crumbled blue cheese


Season with black pepper and serve
