Blueberry - Pineapple Buckle

Serves 9 | Prep Time 30 | Cook Time 50

Ingredients

1 1/2 C flour
1 C sugar
1/2 C butter
1/2 C milk
1 1/2 t baking powder
1 t grated lemon peel
1/2 t vanilla
1/4 t salt
1 egg
1 8oz can crushed pinapple drained
1 C blueberries
1/3 C flour
1/2 t ground cinnamon


1. Heat oven to 350 degrees. In large bowl, mix 1 1/4 Cups flour, 1/2 Cup of the sugar, 1/4 Cup of the butter, the shortening, milk, baking powder, lemon peel, vanilla, salt, and egg with a spoon until well blended. Fold in pineapple and blueberries. Spread in an ungreased 8-inch square pan.


2. In medium bowl, mix 1/3 C flour, remaing 1/2 C sugar and the cinnamon. Cut in remaing 1/4 C butter, using a pastry blender or a fork until it looks like fines crumbs. Sprinkle over blueberry mixter


3. Bake 45 to 50 minutes or until the top is golden brown and a toothpick comes out clean.
