Blueberry Coffee Cake
1 pkg Pillsbury Plus Lemon cake mix
1/2 cup butter, softened
2/3 cup milk
1 can blueberries (16 oz) drained (or use fresh or frozen blueberries)
Preheat oven to 350 degrees.
Grease and flour a 13 x 9 inch baking pan.
In a large bowl, combine the cake mix and butter until crumbly. Remove 1 1/4 cups of the crumbs for the topping; set aside.
To the remaining crumbs, add milk and eggs; beat at high speed for about 2 minutes.
Pour batter into prepared pan. Arrange blueberries evenly over the top of batter.
Sprinkle with the reserved crumbs.
Bake for 35 to 40 minutes or until toothpick inserted in the center comes out clean.
Cool cake and cut into serving pieces.
Pairs Well With
I found this recipe years ago in a magazine. It calls for a can of blueberries, but you could use 2 cups of fresh or frozen berries instead. his is a very easy coffee cake that starts with a cake mix.
