- 2 servings of salmon
- 1 cup blueberries
- 1/2 cup balsamic vinegar
- 1/2 cup white wine (or cooking wine)
- olive oil
- salt and pepper to taste
- Combine blueberries, balsamic vinegar, and white wine in medium saucepan. Boil until reduced to about a 1/3 cup. (15-20 minutes usually.)
- For salmon, heat a large sauté pan over medium high heat. Brush salmon lightly with oil and season with salt and pepper. Place salmon skin side down in sauté pan. Cover and cook about 5 minutes on each side. (keeping the skin on makes for a more tender, flaky piece.)
- Top salmon with blueberry glaze and serve!
NotesI had frozen blueberries I needed to use, and I was cooking salmon. The idea struck me out of nowhere...but it was deeeelicious! So good, so easy, and really pretty! Great for entertaining or if you're just sitting at home and want a good meal.
