Ingredients You'll Need
20 g gluten free Pancake mix
1 g baking powder
20 g greek yogurt
100 g egg whites
12 g quattro (protein powder)
100 g. blueberries (wild)
30 g sweet icing (optional.)
Directions
In mini blender, mix pancake mix, baking powder, yogurt, egg whites and protein powder. Pour 5 round cakes out on a hot griddle prepared with non stick spray. Top with 2/3 of the blueberries spreading evenly between the 5 cakes.
on med high heat, cook until bubbles begin to appear in cake tops. Flip with a large spatula. cook 1 min more. Plate up and drizzle with prepared icing (see recipe) OR maple syrup. Maccroc are counted for icing though.
