BLUEBERRY SOUR CREAM STREUSEL MUFFINS

Ingredients

  • 1 cup sour cream
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup oil
  • 2 cups flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 Tbsp. sugar
  • 1 1/2 cups blueberries
  • Streusel:
  • 1/3 cup brown sugar
  • 2 Tbsp. flour
  • 1 tsp. cinnamon
  • 2 Tbsp. butter

Directions

  • Combine sour cream, milk, egg, and oil in bowl and beat together.
  • Mix together flour, baking powder, baking soda, salt, and sugar.
  • Add to milk mixture.
  • Stir with spoon until blended.
  • Dough will be stiff.
  • Fold in blueberries.
  • Spoon into a well-greased muffin pan.
  • Mix together streusel ingredients until crumbly. Spoon crumbs over top of muffins.
  • Bake at 375° for 15-25 minutes.
  • Serve warm or cold.
  • Yield: 12 muffins
