Ingredients You'll Need
1-2 Tbsp olive oil
2 lbs boneless skinless chicken breasts cut into bite size pieces
1 garlic cloved crushed
1/4 tsp ginger
1/2 tsp crushed red pepper flakes
1/4 cup apple juice or Bourbon
1/3 cup firmly packed light brown sugar
2 Tbsp catsup
1 Tbsp cider vinegar
1/2 cup water
1/3 cup soy sauce
1 Tbsp corn starch
1 Tbsp water
Heat oil in a large pot then add chicken pieces and lightly brown for about 6-7 minutes.
Remove chicken from pot and put aside.
Into the pot add garlic, ginger, red pepper flakes, apple juice, brown sugar, catsup, vinegar, water and soy sauce.
Heat over medium heat stirring to dissolve sugar and combine ingredients.
Add chicken, bring to a boil and simmer for about 20 minutes.
In a small bowl, mix corn starch and water.
Add to chicken mixture to thicken sauce.
Serve over rice.
