BRAD TURNER'S CHICKEN THREE BEAN CHILI

Ingredients

  • 2 tbsp. oil
  • 1.5 lbs. onions, yellow and sweet, diced
  • 1 stalk celery, diced
  • 1 large or 2 medium green peppers, diced
  • 4 serrano peppers, minced
  • 4 jalapeno peppers, minced
  • 3 habanero peppers, minced
  • 2 lbs. ground chicken
  • ¼ cup cumin
  • ¼ cup chili powder
  • 2 cans navy beans
  • 2 cans black beans
  • 2 cans red beans
  • 3 cans tomatoes, canned diced
  • 3 bay leaves
  • 2 tbsp. brown sugar
  • salt
  • black pepper
  • 2 limes, fresh, wedges
  • 1 lemon, fresh, wedges
  • 1 bunch cilantro fresh, chopped
  • 4 roma tomatoes Fresh, diced

Directions

  • 1. In a large pot over medium heat, saute the onion, celery, and peppers until soft, about 5 minutes.
  • 2. Add the chicken and cook until it loses its pink color. Then add the cumin and chili powder and cook 10 seconds more.
  • 3. Add the beans, canned tomato, bay leaves, sugar, and seasoning to the pot. Simmer for 30 minutes.
  • 4. To serve, spoon hearty portions into bowls and garnish with citrus wedges, chopped cilantro, and diced Roma tomato
