Brandied French Toast

INGREDIENTS
- Servings: 2-3 (6 slices)
- 2 large eggs (or 1/2 C egg beater product)
- 2 Tbsp milk or cream (or skim, or 1 %)
- 1 Tbsp Brandy
- ½ tsp real vanilla extract
- ½ tsp cinnamon
- 1/8 tsp freshly ground nutmeg
- 6 slices white (or wheat bread)
- Non-stick cooking spray
DIRECTIONS
Preheat a non-stick skillet or griddle on top of stove on medium heat.
Whisk together all ingredients in a shallow dish.
Spray heated pan with a non-stick cooking spray.
Dip bread, one slice at a time, coating both sides and place in a pre-heated pan.
Cook to a golden brown on each side.
Serve warm with maple syrup or fruit syrup or topping.

I've also made a heart healthy version that tastes just as good. For the healthier version use the following:
Substitute ½ C egg beaters for the eggs
Use skim or low fat milk in place of milk or cream
Use whole wheat or white wheat bread in place of white bread
