Ingredients

  • 3 cold egg whites
  • ¼ tsp. cream of tartar
  • 2/3 cup plus 2 tbsp. sugar
  • ¼ cup water
  • 1 tbsp. light corn syrup
  • 1 ¼ cup unsalted butter, at room temperature, cut into 2 tbsp. pieces
  • 2 tbsp. high-end brandy; I used Knob-Creek
