BREAD

Ingredients

  • 1 quart lukewarm water
  • 2 yeast cake
  • 5 tbsp sugar
  • 1/2 cup soybean oil
  • 1 tbsp salt
  • 3 eggs - well beaten
  • 10 cups white flour
  • 4 cups whole wheat flour

Directions

  • Mix together water, yeast and sugar. Let stand until yeast is dissolved. Add oil, salt and eggs. Add 4 cups flour, whole wheat first. Beat thoroughly. Add remaining flour gradually mixing to a dough that is stiff enough not to stick to hands.
  • Turn out onto floured board and knead lightly. Return to greased bowl, cover and let rise until double in bulk. Punch down then let rise again.
  • Shape into loaves, do not over handle. Let rise to top of pans. Bake in 350 oven for 45 minutes to 1 hour.

Notes

Lynn: I can remember Mom "spanking" the bread to make sure the loaves had no air bubbles in them. I still "spank" mine!
