Breakfast Casserole with Sausage and Cheese
12 ounces ground breakfast sausage
12 ounces spicey ground breadfast sausage
1 onion, chopped
3 large eggs
2 1/2 cups milk
2 teaspoons dry mstard
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup Monterey jack cheese, shredded
1 cup cheddar cheese, shredded
7 slices firm white bread, crust trimmed, cut in 1/2" cubes
Butter 13x9x2" baking dish. Cook both sausages and onion in heavy large skillet over medium heat until sausage is cooked through, breading up sausage with fork, about 8 minutes. Drain off all drippings, Beat eggs, milk, dry mustard, salt and pepper in large bowl to blend. Combine cheeses in medium bowl. Place bread cubes in bottom of prepared dish. Spoon sausage over. Sprinkle cheese over sausage. Pour egg mixture over all. Cover and refreigerate at least 3 hours or overnight.
Preheat oven to 350 degrees. Uncover dish and bake until casserole is set and bubbling, about 30 minutes.
