2 cups broccoli florets
¼ cup water
2 tsp olive oil
4 cubes chicken broth
1 small onion, chopped
1 Tbsp flour
4 oz. cheddar cheese, grated
1 egg, well beaten
Breadcrumbs for top
1 Preheat oven to 325° F.
2 Microwave broccoli in water about 2 minutes then drain.
3 In skillet, heat olive oil then add chicken broth cubes, blend well.
4 Add onions and sauté a little.
5 Add flour and pepper, and blend well.
6 Add water to make a roux, let thicken.
7 Add cheese and blend in.
8 Add broccoli and beaten egg, stir gently.
9 Pour mixture into ungreased 1½ qt. casserole.
10 Sprinkle top with breadcrumbs, then squeeze a little margarine over them; bake uncovered for 20 minutes or until crumbs brown slightly.
