Broccoli Casserole

Serves 8 | Prep Time 20 | Cook Time 45

Ingredients

Three boxes of 10 ounce frozen chopped broccoli (two bags of 16 ounces would work as well)
Two 10.75 ounce cans of cream of mushroom (or one cream of mushroom and one cream of chicken)
8 to 16 ounces of SHREDDED cheddar cheese (16 ounces makes it creamier)
1/2 cup of mayonnaise
Parmesan cheese is optional
Bread crumbs and margarine (1/2 cup or so)
Optional: chopped onions and chopped mushrooms lightly grilled in a frying pan


Thaw out the broccoli by cooking it in a pan (do not overcook!)


Drain the broccoli


Mix the broccoli, soups, cheese, and mayonnaise into a pan and heat just a few minutes to blend (optional: add chopped mushrooms and onions)


Put everything into an open casserole and smooth out the top


Mix bread crumbs in melted margarine (small pan is fine), just enough to make them moist


Spread the bread crumbs on top of the broccoli and then top with parmesan cheese


Bake uncovered at 350 degrees for about 30 minutes or so.
