Why I Love This Recipe

Edamame is commonly used in East Asia as a source of protein. They are fresh green soybeans that are flavorful and have a crunchy texture.

They are nutritious eaten raw as a natural snack.


Ingredients You'll Need

water to cover by 2 inches
2 vegetable bouillon cubes
1/2 cup edamame
4 carrots diced
1 broccoli chopped
3 celery stalks diced
3 sprigs fresh thyme
1 onion chopped
6 garlic cloves minced
dash of oil
salt to taste
chopped parsley for garnish


Directions

Bring water to boil.


Add bullion cubes, beans and carrots and let simmer for 5 minutes.


Add broccoli, celery and thyme and simmer 5 minutes.


Saute onion and garlic and add to pot and simmer for 1 hour.
Add salt to taste


Blend everything.
Garnish with parsley.
