Broccoli Edamame Bean Soup

Serves | Prep Time | Cook Time


water to cover vegetables by 2 inches
2 vegetable bouillon cubes
1 broccoli chopped
4 carrots diced
3 celery stalks diced
salt to taste
3 sprigs fresh thyme
1 onion chopped
6 garlic cloves minced
dash of oil
1/2 cup edamame
chopped parsley for garnish

In a pot of water add bullions, broccoli, carrots, celery, salt and springs of thyme and bring to boil and let simmer for 15 - 20 minutes.

In pan saute onion and garlic with oil and add to pot and simmer for 5 more minutes.

Then add edamame and cook for 5 minutes or until tender.

Remove sprigs of thyme.

Blend everything.

You may garnish with parsley.

Edamame is commonly used in East Asia as a source of protein. They are fresh green soybeans that are flavorful and have a crunchy texture.

They are nutritious eaten raw as a natural snack.
