BROCCOLI RICE CASSEROLE:

Ingredients

  • 1/2 cup sliced mushrooms
  • 1 cup cooked rice
  • 1/4 cup skim milk
  • 1/4 teaspoon salt
  • 1 cup fat-free cheddar cheese -- shredded
  • 1 package frozen chopped broccoli -- thawed and drained
  • 1 small onion (chopped)
  • 2 tablespoons fat-free margarine

Directions

  • Sauté onions and mushrooms until onions are translucent, spray lightly with vegetable oil
  • spray as sautéing. Add other ingredients (except broccoli) and cook, stirring until cheese
  • is melted. Add broccoli. Spoon into a sprayed casserole. Bake at 350 degrees for 25
  • minutes.
