BROCCOLI RICE CASSEROLE:

INGREDIENTS
- Servings: 6
- 1/2 cup sliced mushrooms
- 1 cup cooked rice
- 1/4 cup skim milk
- 1/4 teaspoon salt
- 1 cup fat-free cheddar cheese -- shredded
- 1 package frozen chopped broccoli -- thawed and drained
- 1 small onion (chopped)
- 2 tablespoons fat-free margarine
DIRECTIONS
Sauté onions and mushrooms until onions are translucent, spray lightly with vegetable oil
spray as sautéing. Add other ingredients (except broccoli) and cook, stirring until cheese
is melted. Add broccoli. Spoon into a sprayed casserole. Bake at 350 degrees for 25
minutes.
