Ingredients You'll Need

1 pound sweet Italian sausage
1 28 oz can crushed tomatoes in puree
1 15 oz can tomato sauce
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon sugar
1 8 oz package manicotti shells
1 10 oz package frozen chopped broccoli, thawed
2 large eggs
1/2 cup provolone cheese, shredded


Cook sausage until browned, stirring to break into bite-sized pieces. Spoon off fat. Stir crushed tomatoes in puree, tomato sauce, basil, oregano, and sugar into cooked sausage; heat to boiling. Reduce heat to low; cook 20-25 minutes uncovered stirring occasionally to blend flavors. Meanwhile, prepare manicotti shells as label directs; drain; rinse with running warm water to stop cooking. Drain again. In large bowl, mix cottage cheese, broccoli, eggs, and 1 1/2 cups provolone cheese. Spoon 2/3 of mixture in 13x9" baking dish. Sprinkle with half of remaining provolone. Using spoon, fill manicotti shells with cottage cheese mixture. Arrange filled shells in baking dish in one layer. Spoon remaining sausage mixture over manicotti and sprinkle with remaining cheese; bake at 375 degrees for 25-30 mintues until hot and bubbly.
