Broccoli with Parmesan Crumbs

Why I Love This Recipe

This stuff is awesome.. I put it not only on broccoli, but cauliflower, green beans, and even chicken! It's soooo good


Ingredients You'll Need

*4 cups broccoli (or whatever veggie you want to use!)
*1 T olive oil
*1 garlic clove, minced (I use more, but we love garlic!)
*1/4 t salt
*1/8 teaspoon crushed red pepper
*1/4 C dry breadcrumbs
*1/4 C grated fresh Parmesan cheese


Directions

Cook broccoli in a large pot of boiling salt water for 4 min, until bright green and crisp/tender. Drain in a colander, return to pot, cover and keep it warm


Heat olive oil, garlic, salt, and red pepper in a large skillet over medium - high heat. Cook for 1 min, until garlic begins to sizzle. Stir in breadcrumbs, increase heat a little and cook, stirring frequently, for about 2 1/2 minutes, until crumbs are lightly toasted


Transfer broccoli to serving bowl, add the crumb mixture and Parmesan and toss until the broccoli is evenly coated. Serve hot.


This does NOT keep well overnight if mixed. If you want to serve it later, you can prepare ahead, just do NOT mix broccoli and crumb mixture. This will make the breadcrumbs soggy and nasty! Keep them separate, reheat the broccoli and then mix in crumb mixture
