"New York style cheesecake with a graham cracker crumb crust, topped with a delicate blueberry sauce."Serves 8-10 | Prep Time 15-20 minutes | Cook Time 1 hour and 13 minutes
1 cup graham cracker crumbs
2 1/2 tablespoons butter, unsalted
1 1/2 tablespoons sugar
2 1/2 pounds cream cheese, softened
1 1/2 cups sugar
1 zest of lemon
1 zest of orange
1/2 teaspoon pure vanilla extract
3 tablespoons flour
2 egg yolks
1/2 cup sour cream
1 1/2 cups sugar
3 tablespoons cornstarch
1 1/2 cups water
1/2 cup orange juice, no pulp
2 tablespoons grand marnier
1 1/2 teaspoons zest of orange
1 1/2 cups blueberries
1 1/2 tablespoons butter, unsalted
Preheat oven to 375 degrees F.
Butter the bottom of a 9 inch spring form pan, leaving the side ring on.
In a medium size mixing bowl, add graham cracker crumbs, unsalted butter, and sugar, mix well.
Press into the bottom of the pan and bake until golden brown, about 8 minutes. Make sure you burn it.
Set aside to cool. Once cooled down butter the sides of the spring form rim.
Once crust is cooked, increase the oven temperature to 500 degrees F.
In a large mixing bowl from an electric mixer, add cream cheese, sugar, zest of lemon & orange, and pure vanilla extract, beat until lite and creamy.
Add, flour, eggs (one at a time) mixing well after each egg, and egg yolks (one at a time) mixing well after each one. Add, sour cream and mix until smooth.
Pour mixture into spring form pan and bake for 12 minutes. Reduce heat of oven to 200 degrees F, and bake for an additional 1 hour.
Let cool on rake and refrigerate overnight.
In a sauce pan over a medium heat, add sugar, cornstarch, water, orange juice, zest of orange, and grand marnier. Cook, stirring occasionally until thick, about 5 minutes.
Stir in blueberries and reduce heat to a simmer, stirring occasionally until the blueberries burst. Add, unsalted butter and stir until melted.
Let cool before pouring over cheesecake.
Cut a slice of cheesecake, then pour a small amount of blueberry sauce over the top, a little goes a long way.
