- 1 3 to 4 lb. chicken
- 6 T seasoned salt
- 2 bay leaves
- 1 quart water
- 2 lbs. ground pork
- 2 lbs. ground beef
- 1 quart ketchup
- 1 quart canned tomatoes
- 3 cans cream corn
- 2 cans whole kernel corn
- Cut up and skin chicken. Place chicken, water, bay leaves and seasoned salt in pressure cooker. Cook at 15 lbs. pressure for 30 minutes. Cool cooker at once and strain stock. Debone chicken & reserve meat.
- Pour stock into large (5 gallon) stock pot. Bring to rolling boil. Add pork and return to rolling boil. Add beef and return to rolling boil. Mash whole tomatores and add to pot. Add all other ingredients and simmer over low heat for several hours stirring fequently.
- Makes about 3 gallons.
