Brussels Sprouts with Caramelized Onions and Fresh Thyme
2 cups brussel sprouts halved
water to cover
2 oz. butter
2 TBSP brown sugar
1 small white onion chopped
pinch of salt and pepper
1 teaspoon of fresh thyme leaves chopped
salt to taste
Boil brussels sprouts for 3 minutes.
Drain and put aside.
To caramelize onions add dash of oil in pan and heat to medium high, add onions to hot oil and stir covering onions with oil.
Add pinch of salt and pepper and sugar and thyme, stirring until onions become medium dark.
Add brussels sprouts and stir for another 2 minutes.
