Butter Tart Squares
1 1/3 cups flour
2 tbsp sugar
1/2 cup margarine
1 1/4 ups brown sugar
1/4 cup melted margarine
1 cup raisins
1 tbsp. vinegar
1 tsp. vanilla
1 tsp. flour
Mix first 3 ingredients in a food processor or mixing bowl until crumbly.
Press into a greased 9 inch square pan.
Bake at 350 for 10 to 12 minutes or until light golden.
Beat eggs and brown sugar together until well blended.
Stir in remaining ingredients.
Spread over base.
Bake 25 to 30 minutes longer, or just until set and golden.
Tip: Under baking gives a soft, slightly runny filling, bake longer for a firmer set filling. I prefer the slightly runny myself.
Pairs Well With
These are nearly the same as the butter tarts except in a pan rather than tart shells.
