Butter up your Butternut Squash!!

Serves 3-4 | Prep Time 5 minutes | Cook Time 30-40 minutes


2 cups of chopped butternut squash
3 tablespoons of butter
1/2 cup of brown sugar
1/3 cup of chopped pecans
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice

At the very end of cooking, drizzle with:
2 tablespoons of maple syrup (good quality REAL syrup)

Place diced butternut squash into a stoneware pie pan (or any other type of stoneware pan you might have)

Dot with butter

Mix the brown sugar, nuts, cinnamon, pumpkin pie spice together

Roast in oven at 400 for about 1/2 hour till tender

Let it rest for about 20 minutes once you cook so the juices can set.

You can now drizzle with REAL maple syrup, and if you really want to go crazy, add mini marshmallows and put under the broiler for a minute - JUST BE SURE TO WATCH IT BECAUSE IT WILL BURN QUICKLY!!! Yummy

I love love Butternut squash, and am always experimenting with it. I had a beautiful Ginger Gold Apple, and decided to use it to compliment the Butternut squash. Teamed with butter, maple sugar, brown sugar, chopped pecans, cinnamon and pumpkin pie spice, ALL is well in the world!!
