Why I Love This Recipe
When living in Japan, we did not have cake mixes. So I learned to find recipes that I could find ingredients for. Missionary friends, Joan Stoller and her sister, Mary Lou Ellison also had the Kiron Church Cookbook. Joan told me which were the best recipes. She loved this recipe. It also makes 30 cupcakes. It is Lila Gustafson's recipe. It was good to see her at Hannah's graduation. She came from assisted living with her daughter.
Ingredients You'll Need
2 c. sugar
1/2 c. cocoa
2 1/2 c. flour
2 t. baking soda
1/2 t. salt
1 c. buttermilk
1 t. vanilla
2 eggs
1 c. cooking oil
1 c. boiling water
Directions
In a bowl, combine all ingredients, except boiling water - add that last. Pour batter into a greased 9x13" cake pan. Bake at 350 F for 45-55 minutes. Great served with whipped cream. You can make buttermilk by first putting 1 T. vinegar or lemon juice in a measuring cup. Then fill to 1 c. with milk. Let set for 5 minutes. Then use as buttermilk.
