- 2 c. sugar
- 1/2 c. cocoa
- 2 1/2 c. flour
- 2 t. baking soda
- 1/2 t. salt
- 1 c. buttermilk (or 2 T. vinegar plus milk to = 1 c. and let sit 5 min.)
- 1 t. vanilla
- 2 eggs
- 1 c. cooking oil
- 1 c. boiling water
- In a bowl, combine all ingredients, except boiling water - add that last. Pour batter into a greased 9x13" cake pan. Bake at 350 degrees F. for 45-55 minutes. It makes 30 cupcakes and bake them for 18-20 minutes.
NotesThis is my "go to" recipe for cake from scratch. It was in the Kiron Baptist Church Cookbook. Joan Stoller had the same cookbook and she told me which recipes were the best for cooking in Japan. This was her favorite, too.
