Buttermilk Pancakes

Ingredients

2 cups All-purpose flour
2 tablespoons Sugar
¾ teaspoon Salt
¾ teaspoon Baking soda
2 large Eggs
2 ¼ cups Buttermilk
4 tablespoons Butter melted
1 teaspoon Vanilla


Preheat a lightly greased griddle. Add to a large bowl the flour, sugar, salt and baking soda; blend with a whisk and set aside.


Beat the eggs in a medium bowl and slowly add the melted butter. Blend in the butter milk and vanilla.


Add the wet ingredients to the dry ingredients and carefully blend just until incorporated (there should be lumps but no obvious flour remaining).


Scoop about 1/4 c. batter onto the griddle for each pancake and turn when bubbles start to form.

Yum... good go-to recipe for a quick dinner for kids. I love the vanilla and sugar flavors that shine through. The recipe comes from combining recipes found on the internet and cookbooks.
