1 cup flour
1 tsp salt
1 tsp baking soda
1 1/8 cups buttermilk
2 Tbsp butter, melted
Preheat and lightly grease a large skillet or griddle.
Mix flour, salt and baking soda together in a bowl.
Add the egg, buttermilk, and butter. Stir lightly only until combined. Batter should look thick and spongy.
Drop batter by approximately 1/3 cup onto cooking surface. Cook until lightly browned on each side, about 1 to 2 minutes per side.
