Butternut Squash Medley
butternut squash peeled and cut in squares
water to cover 1 inch
1 onion chopped
4 garlic cloves minced
dash of olive oil
4 tomatoes chopped
salt and pepper to taste
small bunch parsley chopped for garnish
In a pot cook butternut squash in water for 15 -20 minutes or until soft.
Drain and set aside.
In pan saute onion and garlic with oil.
Add tomatoes, butternut squash, salt, pepper then mix and cook everything 5 minutes more or until done.
Garnish with Parsley.
