Butternut squash is in season all year round.
Ingredients You'll Need
butternut squash peeled and cut in squares
water to cover 1 inch
1 onion chopped
4 garlic cloves minced
dash of olive oil
4 tomatoes chopped
salt and pepper to taste
small bunch parsley chopped for garnish
Directions
Boil butternut squash and simmer in a pot for 10 minutes. Drain and sauté butternut squash with olive oil.
Add onions and garlic and sauté.
Lastly add tomatoes and cook a little more.
Garnish with Parsley.
