Butternut Squash Ravioli with Sautéed Mushrooms, Onions and Pepitas Seeds

Why I Love This Recipe

If you like butternut squash (heck even if you haven't in the past), you'll love this recipe. It's quick, easy and tasty. I have tried for years to master butternut squash ravioli (the fresh packages you see at the grocery store) -- but never knew how to serve it. Just butter? But last night I tried something different. I had been sauteing onions to add flavor to my ready made pasta sauce and thought it could work with the ravioli too. Then we added mushrooms and had some Pepitas Seeds left over (my husband's idea). Jesus... it was delicious! I am definitely making this again. The meal for two cost us maybe $10 at trader joes. I can't wait to make it again. This is a great recipe for one or two.


Ingredients You'll Need

One package fresh butternut squash ravioli (I got a package from Trader Joes). One package serves two --
1 tablespoon olive oil
1/2 cup chopped onions
1 -2 tablespoons butter (it's really your own preference)
Sliced white mushrooms - depending on size, I used about 10 small ones
Pepitas Seeds - I used about two tablespoons


Directions

Bring pot of water to a boil. I used a medium-sized pot.


While pot is waiting to boil, chop onions and slice mushrooms. Then in a small pan add the olive oil, onions.


Once onions start to carmalize (they become clear and start to brown) add the mushrooms, butter and Pepitas Seeds. Mix until they form a nice consistancy -


Once your water starts to boil (these are directions on the package)... add your butternut squash (package says to put in and once it starts to boil, cook for 3 minutes).


Once the pasta is cooked, pour out the water immediately (don't let them sit in the water or they will start to flatten). Place raviolis on a plate and then top with your mushroom, onion, seed topping.
